.3 carrots grated (about 2 cups)
.juice of 1-2 oranges, about 1\2 of a cup
.juice of 1 lemon, about 1\4 of a cup
.1\4 cup honey
.fresh mint leaves
Put carrots in a bowl. Stir in juices and honey. Cover and refrigerate for at least 2 hours. Garnish with mint before serving.
